Favorite Pumpkin Muffin recipe

This is my favorite pumpkin muffin recipe to make every fall. Perfect for breakfast and snacks, this moist pumpkin-y muffin freezes well if it can last that long.

Serve these delicious pumpkin muffins straight out of the oven, or at least warm them up before digging in. A glass of milk accompanies them nicely.

Fall is my favorite season, and one of the things I look forward to most is indulging in all the delicious pumpkin treats that come with it. From pumpkin spice lattes to pumpkin pies, there are many tasty ways to enjoy this beloved squash. But my absolute favorite has to be my homemade pumpkin muffins.

These muffins are moist, fluffy, and packed with all the warm spices that make fall special. They’re also incredibly easy to make, so even if you’re not the most experienced baker, you can still whip up a batch in no time.

Here’s what you’ll need:

  • Pumpkin Pureé
  • Flour & Sugar
  • Baking soda & baking powder
  • Salt
  • Cloves, cinnamon, nutmeg, allspice,
  • Vegetable oil

Can I Substitute Something for the Oil in this Pumpkin Muffin Recipe

You can absolutely substitute apple sauce (exact amount) for the oil in this recipe. I found that they were not as moist, though. And I felt like the applesauce took away some of the pumpkin flavor. That is just my opinion, though.

Can Your Favorite Pumpkin Muffin Recipe Be Frozen?

Yes! Yes! Yes! If they can last that long. I love to wrap them individually in plastic wrap and then place them in a freezer bag. This way, I can grab one and go!

Optional Toppings

You can add toppings to your muffins, such as a sprinkle of cinnamon sugar, chopped nuts, or a drizzle of maple glaze. My fave topping is a sprinkle of cane sugar right on top before baking. It adds a delicious crunch.

Ingredients

  • 1 (15 oz) can of pumpkin pureé
  • 3 cups all-purpose flour
  • 2 cups sugar
  • 2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 2 tsp. ground cloves
  • 2 tsp. ground cinnamon
  • 2 tsp. nutmeg
  • 2 tsp. allspice
  • 1 tsp. salt
  • 2/3 cup vegetable oil
  • 3 eggs

Instructions

    1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a muffin tin or line it with cupcake papers.
    2. In a large bowl, stir together flour, sugar, baking soda, baking powder, spices, and salt. In a separate bowl, beat pumpkin pureé, oil, and eggs together. Stir pumpkin mixture into the dry ingredients until smooth. Scoop batter into muffin cups.
    3. Bake for 20 - 25 minutes until a toothpick comes out clean.
