Easy Pumpkin Muffins
I have something to tell you. I’m a pumpkin snob. I’ve seen this pumpkin recipe on the inter webs for years and thought “there’s no way these are any good.” Only two ingredients? How could two ingredients possibly make for a moist and tasty pumpkin muffin.
I’m not sure how it works but it just does. Two ingredients makes for a totally moist, totally tasty pumpkin muffin. Boy, was I wrong. I hope my family forgives the years worth of quick and easy pumpkin muffins they’ve been denied all these years. There were still plenty of muffins for them to enjoy, but who knows how many dozens of other pumpkin goodies could have been consumed if only I’d put aside my pumpkin snobbery and just made the two ingredients muffins?
I digress.
If you can handle the pressure of a third ingredient, throw in a couple handfuls of white chocolate chips, about 1/2 to 3/4 cup. I much prefer the white chocolate-pumpkin combo over chocolate-pumpkin. But, you do you! Don’t be a snob like me. Heck, with just two ingredients and this easy muffin recipe, you can get wild and crazy with your pumpkin self and try both.
How to Store 2 Ingredient Pumpkin Muffins
These are so moist I like to store them in the fridge.
For long term, I wrap individually in plastic wrap and place them in freezer bags. It’s so easy to just pull out one at a time.

We have this set of mixing bowls and I love them because they don’t move around while I’m stirring.
A sturdy spatula is all you need to mix. I prefer the type that are all one piece.
I used both paper and foil cupcake liners with these muffins and I much preferred the foil liners.

Easy 2 Ingredient Pumpkin Muffins
Ingredients
- 1 Box Spice Cake Mix
- 1 (15oz) Pumpkin Puree (not pumpkin pie filling)
- 1/2 cup white chocolate chips, optional
Instructions
Heat oven to 325°.
Prepare cupcake pans. Spray with cooking spray or use liners.
In a medium bowl, mix boxed cake mix and the whole can of pumpkin puree. Stir to combine.
Stir in white chocolate chips, if using.
Spoon mixture into cupcake liners, or the pan, about 2/3 full.
Bake for 18-20 minutes.
