Pumpkin Spice Cupcakes with Cream Cheese Frosting
Experience the enchanting essence of autumn with our delightful pumpkin cupcakes with decadent cream cheese frosting.
Ingredients
- Cupcakes:
- 1โ2 c. unsalted butter, softened 1 2โ3 granulated sugar
- 6 egg whites
- 2 c. all purpose flour
- 2 1โ2 t. Baking powder
- 1โ2 t. Salt
- 1 t. Vanilla
- 2 t. Pumpkin spice
- 1 1โ4 c. milk
- 1โ4 c. vegetable oil
- 1 - 15 oz can of pumpkin puree
- Frosting:
- 1โ2 c. unsalted butter, softened 8 oz cream cheese, softened 1โ2 t. Salt
- 1 t. Vanilla
- 4 c. powdered sugar
Instructions
- Preheat oven to 350°. Add cupcake liners to a muffin pan or grease and flour. Set aside.
- In the bowl of a stand mixer, cream together butter and sugar until light and fluffy, about 3 minutes.
- Add pumpkin spice, salt, baking powder, vanilla, milk, oil, pumpkin puree, and egg whites. Mix until well combined.
- Lastly, add in flour and mix well. Stop the mixer and scrape down the bowl. Mixture should not have bumps or lumps.
- Use a small ice cream scoop or a small measuring cut to fill each liner with batter about 2/3 to 3/4 full. The batter will rise during baking.
- Bake for 14 - 16 minutes until cupcakes are set and edges are just slightly browned.
- Cool completely before removing the cupcakes from the pan.
- For the frosting: Mix together softened butter and cream cheese for 1 minute. Add vanilla and salt. Finally, slowly add the powdered sugar and mix until smooth Frosting should form stiff peaks and be nice and creamy.
- Transfer frosting to a piping bag fitted with a large star tip and twist the end to secure. Gently pipe a dollop of frosting onto each cupcake. Sprinkle with additional pumpkin spice to garnish.
Notes
Cupcakes can be stored in the refrigerator in an airtight container for 2 days.
