Ingredients

  • Cupcakes:
  • 1โ„2 c. unsalted butter, softened 1 2โ„3 granulated sugar
  • 6 egg whites
  • 2 c. all purpose flour
  • 2 1โ„2 t. Baking powder
  • 1โ„2 t. Salt
  • 1 t. Vanilla
  • 2 t. Pumpkin spice
  • 1 1โ„4 c. milk
  • 1โ„4 c. vegetable oil
  • 1 - 15 oz can of pumpkin puree
  • Frosting:
  • 1โ„2 c. unsalted butter, softened 8 oz cream cheese, softened 1โ„2 t. Salt
  • 1 t. Vanilla
  • 4 c. powdered sugar

Instructions

  1. Preheat oven to 350°. Add cupcake liners to a muffin pan or grease and flour. Set aside.
  2. In the bowl of a stand mixer, cream together butter and sugar until light and fluffy, about 3 minutes.
  3. Add pumpkin spice, salt, baking powder, vanilla, milk, oil, pumpkin puree, and egg whites. Mix until well combined.
  4. Lastly, add in flour and mix well. Stop the mixer and scrape down the bowl. Mixture should not have bumps or lumps.
  5. Use a small ice cream scoop or a small measuring cut to fill each liner with batter about 2/3 to 3/4 full. The batter will rise during baking.
  6. Bake for 14 - 16 minutes until cupcakes are set and edges are just slightly browned.
  7. Cool completely before removing the cupcakes from the pan.
  8. For the frosting: Mix together softened butter and cream cheese for 1 minute. Add vanilla and salt. Finally, slowly add the powdered sugar and mix until smooth Frosting should form stiff peaks and be nice and creamy.
  9. Transfer frosting to a piping bag fitted with a large star tip and twist the end to secure. Gently pipe a dollop of frosting onto each cupcake. Sprinkle with additional pumpkin spice to garnish.

Notes

Cupcakes can be stored in the refrigerator in an airtight container for 2 days.
