Simple Pumpkin Spice Granola

Sometimes I want a sweet and crunchy pumpkin treat without the cloyingly sweet consistency of my normal pumpkin desserts and that’s where my simple pumpkin spice granola comes in to save the day.

This easy granola recipe flavored with my homemade pumpkin pie spice is a cinch to throw together on a lazy weekend morning and makes enough granola to snack on throughout the week. I love it with a splash of almond milk but it really shines layered with a thick blanket of vanilla flavored Greek yogurt for a tasty and pumpkin-y breakfast parfait.

There are two options for baking this easy granola recipe and I’ll cover both so let’s get to it, shall we?

Simple Pumpkin Spice Granola

This is a truly versatile granola base. Feel free to add or subtract ingredients based on your own snacking preferences.

Generally, I have all the ingredients on hand so making my simple pumpkin spice granola is easy to do on a quiet morning when I can hang out in the kitchen to do the stirring every twenty minutes or so.

Here’s what you need for the basic granola base: (scroll down for a printable recipe card)

  • oatmeal
  • brown sugar
  • pumpkin pie spice
  • pecans, walnuts, almonds (or any other nut)
  • vanilla extract
  • maple syrup
  • applesauce
  • canola oil
  • raisins

Preheat your oven to 200. Prepare a small cookie sheet with parchment paper or baking liner.

In a bowl, mix all the dry ingredients except for the raisins (or any fruit/add-ins you are using). In a measuring cup, mix together all the wet ingredients and stir to combine.

Pour the wet ingredients over the dry ingredients and stir to combine until mixed well.

Dump the wet mixture onto your prepared baking sheet and flatten into a nice even layer.

Bake at 200 for 1 hour and 15 minutes stirring every 20 minutes. Remove from oven and let cool completely.

After your granola has cooled, add in raisins and/or any other fruits you’re using.

Alternate way to bake: I’ve also done a quick bake method: bake at 350 degrees for 15 to 20 minutes, stirring every 5 minutes.  Remove from oven and cool completely. Stir in raisins/add-ins.

Add-ins for Your Pumpkin Spice Granola

Change up this easy granola recipe by adding the following:

  • coconut flakes (add it in halfway through the baking process)
  • golden raisins
  • pumpkin seeds
  • sunflower seeds
  • dried cranberries or other dried fruit

Storing & Freezing Homemade Granola

Let the baked granola cool completely. If you like a “clumpier” granola, pinch the granola during the cooling process, not while it bakes. You want a nice even baked granola.

Store granola in an air tight container. You can also freeze completely cooled granola…if you can make it last that long!

I love these kinds of jars for storing my granola.

A small jelly roll pan is the perfect size for this amount of granola.

I find these parchment sheets the easiest to use because they’re already the perfect size for my granola pan. No cutting. You’ll want to use parchment OR this in order to keep the sweetener sticking to the oats & nuts and not your pan. Just be sure your liner fits the pan.

Best Way to Eat Simple Pumpkin Spice Granola

I love a good pumpkin parfait! Begin with a layer of granola. Add some yogurt. I like vanilla Greek yogurt. Repeat layers, as desired. Top with a bit more granola and crushed gingersnaps.

Simple Pumpkin Spice Granola

Pumpkin Spice Granola is the perfect pumpkin-y fall treat you can make and enjoy all year long.

Ingredients

  • 2 cups oats (i generally use quick oats)
  • 2 tbs + 2 tsp brown sugar
  • 1 1/2 tsp pumpkin pie spice
  • 1/4 cup pecans
  • 1/4 cup walnuts, (or any other nut)
  • 1/2 tsp vanilla extract
  • 1/4 cup maple syrup
  • 2 tbsp applesauce
  • 1 tbsp canola oil
  • 1/4 cup raisins

Instructions

Preheat your oven to 200. Prepare a small cookie sheet with parchment paper or baking liner.
