I mean, sometimes, I just like easy. And, I love pumpkin bread. This easy pumpkin bread hack gets it to my lips and hips lickety-split. lol

Easy Pumpkin Quick Bread Hack
You can make this autumn inspired pumpkin bread with a box mix you can probably find at your local grocer. My “W” store has had this in stock all year long. Feel free to substitute a bag or pouch pumpkin quick bread mix instead. I’ve done both with tasty results.
What you’ll need for this easy pumpkin bread recipe hack:
- Pillsbury Quick Bread (14 oz mix)
- Pumpkin Puree (NOT pumpkin pie mix)
- Pumpkin Pie Spice
- Eggs
- Baking soda
- Water
I prefer baking my pumpkin in three mini bread pans instead of a full size loaf pan. I find it easier to store individual loaves and not so pressured to get a whole loaf eaten before it goes stale. No worries of that with this pumpkin bread recipe though. Using canned pumpkin instead of oil keeps this bread super moist.
Throwing this together couldn’t be any simpler or easier. Add ingredients to a bowl and stir to combine. Follow the box instructions for preparing the pans and baking. It’s so easy-spray the bottoms of the pans with a cooking spray and bake 25-30 minutes. Easy peasy pumpkin pleasy!

Easy Pumpkin Quick Bread Hack
Ingredients
- Pumpkin Bread Box/Pouch Mix
- 2 eggs
- 1/2 cup pumpkin puree
- 1/2 tsp baking soda
- 1/2 tsp pumpkin pie spice
- 1/2 cup water
Instructions
- Preheat oven to 350. Spray bottoms pans, bottoms only. Set aside.
- In a medium mixing bowl, combine boxed mix, pumpkin puree, eggs, baking soda, pumpkin pie spice, and water. Stir to combine. Do not over mix.
- Pour batter into three mini loaf pans (or muffins, or one loaf pan)
- Follow box directions for baking time. Mini loaf pans took 25-30 minutes.
- Remove from oven and cool. Enjoy!
Notes
Disregard ingredients section on the box mix. Use my ingredients instead and then follow box directions for baking.
